Shortcut Chicken Pot Pie

Ingredients List
- 2 large chicken breasts - approx ½ - ¾ lb
- 1 can of Chicken Pot Pie soup
- ½ bag of frozen mixed vegetables
- ½ cup chicken stock
- 1 package of pie crusts (it will have a top and bottom crust)
Directions
Pan saute the chicken until it is cooked throughout
Dice the chicken into bite size pieces
Add the chicken, soup, chicken stock, and vegetables into the pan
Bring to a simmer
While mixture is warming, place one pie crust on the bottom of a pie baking dish
Fill the pie crust with the chicken/soup mixture
Unroll the 2nd pie crust and place it on top
Use your fingers to firmly press down the edges of the crust
Cut 4 "holes" in the top of the pie crust (picture above)
Bake at 350 for 45 minutes or until crust is golden brown
