Shrimp Fricassee

 Ingredients List

  • 2 tb Butter
  • 2 tb Flour
  • 1 1/2 c Canned tomatoes
  • 2 tb Finely chooped tomatoes
  • 2 tb Chopped green peppers
  • 1/4 ts Garlic minced
  • 1/4 ts Salt
  • 1/4 ts Pepper
  • 1/8 ts Thyme
  • 1/2 ts Parsley flakes
  • 1 Bay leaf
  • 1/2 ts Celery salt
  • 1 lb Shrimp cooked, peeled and
  • Deveined
  • 2 c Cooked rice

 Directions

1) Preheat oven to 350. F

2) Melt butter in large frying pan. Add flour; cook constantly, until
lightly browned.

3) Add tomatoes, green pepper, garlic, salt, thyme, parsley, bay leaf,
celery salt, pepper, and salt; simmer 15 minutes.

4) Add shrimp to frying pan; simmer for 5 minutes.

5) Pack cooked rice into greased custard cups; bake for 5 minutes.

6) To serve, unmold rice unto serving platter. Pour shrimp mixture over
rice molds.
