Skinny Spanish Rice

Ingredients List
- 1 tb Diet margarine
- 1 1/2 c Onion -- chopped
- 1 c Rice; converted white --
- Uncook
- 1 c Green pepper -- chopped
- 1 c Celery -- chopped
- 1 ts Chili powder
- 8 oz Can whole tomatoes --
- Undrain
- 1 ts Salt
- 2 c -- water
- 3 tb Bacon bits
Directions
Melt the margarine in a heavy skillet. Saute the onion. Stir in the rice,
green pepper, celery, chili powder, canned tomatoes and salt. Add the
water; bring mixture to a boil. Reduce heat and simmer, covered, for about
20 minutes until the liquid is absorbed and the rice is cooked. Garnish
with the bacon bits to serve. Per Serving: Calories116.1
