Slim and Savory Spinach Potato Soup

 Ingredients List

  • 4 c Chicken broth
  • 3 md Leeks white part only
  • Sliced OR
  • 3 md Onions chopped
  • 6 oz Spinach trimmed and chopped
  • 3 c Cubed potatoes
  • 2 tb All natural sour cream and
  • Butter flavor sprinkle
  • Freshly ground black pepper

 Directions

Bring broth, leeks and spinach to a simmer. Cover and cook 5 minutes. Add
potatoes and cook, covered, 20 minutes, or until potatoes are tender. Puree
half the mixture; return to saucepan. Stir in butter sprinkles and pepper.
Serve hot or cold.
