Sloppy Joes & Potato Salad

  • Ingredients:
  • 25 large russet potatoes
  • 1 dozen eggs (hard boiled and chopped)
  • 3 cups Miracle Whip salad dressing
  • 1 cup yellow mustard (regular yellow mustard)
  • 2 large white onions (chopped)
  • 3 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • paprika (optional)


Place potatoes in a very large pot and cover with water. (If you don't have a large enough pot, split into two batches.)
Boil until potatoes are tender when stuck with a fork.
Be careful not to overcook. The potatoes shouldn't be mushy.
Remove potatoes from water and let cool until potatoes can be handled.
Peel carefully and discard skin.
Chop potatoes in 1/2" chunks.
Place the chopped potatoes, hard boiled eggs and onions in a large plastic bowl.
In a separate bowl, mix together salad dressing, mustard and seasonings. Stir well.
Pour mixture over potatoes and mix will your hands to thoroughly coat.
Seal in air-tight bowl and refrigerate overnight.
Top with paprika, if desired.
