Slow Cooker Butter Chicken

Ingredients List
- 2 lbs chicken breast, cubed
- 1 tbsp vegetable oil
- 1 shallot, finely chopped
- 1/4 white onion, chopped
- 2 tablespoons butter
- 2 tsp lemon juice
- 4 garlic cloves, minced
- 1 inch ginger, minced
- 2 tsp garam masala
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 bay leaf
- 1/4 cup plain non fat yogurt
- 1/4 cup half and half
- 3/4 cup skim milk
- 1 cup tomato sauce
- 2 1/4 teaspoon cayenne pepper, or to taste
- 1 pinch salt
- 1 pinch black pepper
Directions
1. In a medium sauce pan, heat the oil over medium heat. Add the shallot and onion and saute until soft.
2. Add the butter, lemon juice, giner, garlic, garam masala, chili powder, cayenne, cumin, and bay leaf. Cook for 1 minute until fragrant.
3. Add the tomato sauce and cook for 2 minutes stirring often.
Add the half and half, milk, and yogurt. Reduce heat to low, stir, and simmer for 10 minutes. Stir frequently.
4. Taste and season with salt and pepper.
5. Add everything to a blender and blend until well combined.
6. Add cubed chicken breast to the slow cooker and cook for 4 hours. 7. Enjoy with rice or cauliflower rice
