Ingredients List
- 8 cups low sodium chicken broth
- 2 boneless skinless chicken breasts
- 2-16oz cans black beans, drained and rinsed
- 2-15oz cans diced tomatoes
- 1-6oz can of tomato paste
- 1-4oz can chopped green chilies
- 3 garlic cloves, minced
- 1 medium sweet onion, chopped
- ½ green pepper, chopped
- 1½ teaspoon chili powder
- 1½ teaspoons cumin
- Salt and pepper to taste
- Garnish:
- Cheese
- Avocado
- Cilantro
- Lime Juice
- Sour Cream
- Tortilla strips
- Jalapenos
Directions
1. Combine all ingredients except garnish in a slow cooker.
2. Cook on high for 3-4 hours or on low for 6-8 hours.
3. With 30 minutes left in the cooking time remove chicken and shred with a fork, return to slow cooker and finish cooking.
4. Garnish with your favorite toppings and serve warm.
