Slow Cooker Enchilada Tacos with Chili-Lime Sour Cream

 Ingredients List

  • 8 oz. sour cream
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. smoked paprika
  • juice of one lime
  • 2 lbs. {boneless, skinless} chicken breasts
  • 1 {10 02.} can enchilada sauce
  • Optional Add-Ins:
  • chopped onion
  • chopped jalapenos
  • 1 can diced green chiles
  • 1 pack flour tortillas
  • chopped cilantro
  • Mexican Crumbling Cheese {Queso Fresco}

 Directions

Combine sour cream, chili
powder, cumin, paprika and
lime juice. Refrigerate while
chicken cooks, or even
overnight.

Combine chicken, enchilada
sauce and any add-ins in slow
cooker. Cook on LOW 6-8 hours,
covered. Remove chicken and
shred in a bowl. Add a bit of th
cooking juices, if you like.
Serve in tortillas with cilantro
and Queso Fresco, crumbled.
