Slow Cooker Fruity BBQ Chicken

Ingredients List
- 1.3 lbs assorted chicken drumsticks and thighs
- 2.1 tbs salt
- 3.1 tsp pepper
- 4.1 tsp garlic powder
- Fruity BBQ Sauce:
- 1 cup high-quality BBQ sauce (like Sweet Baby Ray's)
- 2.1/2 cup apricot or peach preserves*
- 3.2 tsp dijon mustard
Directions
1.Mix salt, pepper and garlic powder. Sprinkle on chicken and rub in well. NOTE: skin may be removed from chicken if desired. Place chicken in the bottom of a 6 or 7 quart slow cooker, try to get chicken in a single layer if possible. An oval slow cooker would be best here.
2.Set cooker to HI and cook for 3 hours or on LOW 6 hrs (I recommend cooking on HI).
3.In a small bowl, mix all the Fruity BBQ Sauce ingredients. Set aside.
4.Remove chicken from slow cooker and place on a plate. Drain juices from the slow cooker crock and wipe the crock dry with a paper towel. Place chicken back in the slow cooker. Pour HALF the sauce over the chicken. Cover and continue cooking on HI for an additional 1 hour or LOW and additional 2 hours.
5.Remove chicken from slow cooker and brush with some more sauce (I reserved about 1/4-1/2 cup for dipping, but you can use it ALL if you wish). I popped the chicken under the broiler for a minute or 2 to crisp it a bit...but it's not necessary.
