Slow Cooker Kielbasa, Chickpea & Tomato Ragout

Ingredients List
- 2 Links Kielbasa (16oz), sliced ½" thick diagonally
- 1 tbsp. Extra Virgin Olive Oil
- 2 Garlic Cloves, chopped
- 1 Medium Scallion, chopped
- ¼ c. Red Wine
- 1 c. Low Sodium Chicken Stock
- 1 c. Fresh Diced Tomatoes
- 1-15oz. Can Chickpeas, rinsed and drained
- 1 tbsp. Rosemary, chopped
- 2 tbsp. Tomato Paste
- Kosher Salt, as desired
- Fresh Ground Black Pepper, as desired
Directions
In a large saute pan, add the oil and kielbasa and saute over medium heat until lightly browned; approximately 5 minutes.
Next, add the garlic and scallions and saute for another 1-2 minutes; then add the wine, chicken stock, tomatoes, chickpeas, rosemary and tomato paste. Mix well.
Pour mixture into your slow cooker and cook on low 4-6 hours or high 2-3 hours.
