Slow Cooker Pasta Fagioli

Ingredients List
- 1 pound 90/10 ground beef
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 1: 28- ounce can of crushed tomatoes
- 4 1/2 cups beef stock
- 2 bay leaves
- 1 1/2 teaspoon Italian seasoning
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 1: 15- ounce can of cannelini beans, drained and rinsed
- 1: 15- ounce can of red kidney beans, drained and rinsed
- 1 cup uncooked ditalini pasta
Directions
Brown ground beef in a skillet and break into tiny pieces. Cook until no longer pink. Then add to the insert of a slow cooker, along with the remaining ingredients except the beans and pasta.
Cook on low for 7-8 hours or high for 3-4 hours.
Prior to serving, add the beans and pasta to the slow cooker. Cover and cook for another 30 minutes.
Season with salt and pepper. Remove bay leaves prior to serving.
Keep leftovers in the fridge in an airtight container for up to one week.
