Slow Cooker Shrimp Fried Rice

Ingredients List
- 1 3/4 C. Long-Grain Rice, uncooked
- 2 Tbs. Low-Sodium Soy Sauce
- 2 Garlic Cloves, minced
- 3 1/2 C. Low-Sodium Chicken Broth
- 1 Medium Red Bell Pepper, stemmed, seeded, and diced
- 1 16 oz. package Frozen Mixed Vegetables, thawed and drained
- 2 C. Pre-Cooked Baby Shrimp, cleaned and deveined
- 2 Eggs, lightly beaten
Directions
Mix together the rice, soy sauce, garlic, broth, bell pepper, mixed vegetables, and shrimp in a large slow cooker. Cover and cook on high 2 hours, or until rice has fully absorbed liquid. Pour eggs over fried rice mixture. Continue cooking for 45 minutes or until egg has set. Stir before serving.
