Smoked Gouda, Chicken & Bacon Pasta

Ingredients List
- 14 ounces penne or rotini pasta
- 1 1/2 cups half & half
- 1 tablespoon olive oil
- 1 clove garlic, crushed
- 3/4 cup chopped tomatoes
- 1/2 cup white wine
- 3/4 cup grated Parmesan
- 3/4 cup grated Asiago cheese
- 1/2 cup chopped bacon bits
- 2 cups shredded rotisserie chicken
- salt and pepper to taste
- 6 slices smoked Gouda
- flat leaf parsley, chopped for garnish
Directions
Put the pasta water on to boil. Warm half & half in a small saucepan over low heat.
Place olive oil in a large sauté pan over medium heat. Cook garlic and tomatoes for three minutes. Stir in wine; cook one minute. Remove pan from heat. Very gradually whisk in warm half & half (don”™t worry if it curdles a little bit ”“ it will come back together when the cheese is added.) Stir in Parmesan and Asiago cheese and let melt completely.
Salt pasta water and cook pasta according to package directions. Preheat oven to 400 degrees.
Drain cooked pasta. Combine pasta with cheese sauce and tomatoes. Add half of bacon bits and chicken and stir to combine. Add salt and pepper to taste. Pour mixture into a 9×13 baking dish. Top with sliced Gouda. Bake for 10 minutes at 400 degrees or just until Gouda has melted. Garnish with remaining bacon bits and parsley.
