Smoked Sausage and Pepper Pasta Skillet

Ingredients List
- 8 oz. uncooked pasta (I used rotini)
- 2 tsp. olive oil
- 1- 14 oz. package of fully cooked turkey smoked sausage ( I like Hillshire FarmĀ® Turkey Smoked Sausage)
- 2 med. bell peppers cut into 2" strips (red, green, orange, or yellow or a combo of them)
- 1 med sweet onion, cut in half and then slices
- 2 cloves garlic, minced
- 1/2 cup red wine
- 28 oz. can of crushed tomatoes
- 1/2 tsp. red pepper flakes (or to taste)
- Kosher salt and pepper, to taste
- 1/2 cup fresh basil, chopped
Directions
Cook pasta to package directions. Drain and set aside.
While pasta is cooking, add olive oil to large nonstick skillet and heat over med/high heat until it begins to shimmer. Add in sliced sausage and cook for about 3 minutes. Add in peppers, onions, and garlic. Stir and cook for another 3 - 5 minutes, or until veggies begin to soften.
Add wine to skillet and cook until most of it has evaporated. Then, add in the crushed tomatoes, red pepper, and salt and pepper to pan. Bring to boil, then reduce to simmer. Cover and cook until veggies are tender. About 10 min.
Stir in cooked pasta and fresh basil. Serve immediately.
