Smoky Black Bean and Corn Chowder

 Ingredients List

  • 1/2 c Yellow Onions; Chopped
  • 4 tb Butter Or Margarine; Melted
  • 1/4 c All-Purpose Flour
  • 1/4 ts Black Pepper; Freshly Ground
  • 1 1/4 ts Salt
  • 4 c Milk
  • 17 oz Whole Kernel Corn; Canned,
  • -Drained
  • 4 Smoked Sausage Links; Sliced
  • 8 oz Black Beans; Canned, Drained

 Directions

In a saucepan, sauté onion in butter until tender but not brown. Stir in
flour, salt and black pepper. Add milk, and bring to a boil, stirring
constantly until thick and bubbly, about 1 minute. Stir in drained corn,
sausage slices and drained black beans. Reduce the heat and simmer for 10
minutes.

Serving Ideas : With Fresh baked bread

NOTES : Just about any smoked meat can be substituted for the Smoked
Sausage Links.
