Softened Lemon Pillow Cookies

Ingredients List
- 1¾ cup flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup butter, softened
- ½ cup sugar
- 1 large egg
- 2 tablespoons sour cream
- 2 tablespoons milk
- 2 teaspoons lemon juice
- 1 teaspoon vanilla
- 3 tablespoons sugar
Directions
1. Preheat oven to 350 degrees.
2. In a small bowl, combine flour, baking powder, and salt. Set aside.
3. In a mixer fitted with a paddle attachment or medium bowl, combine the remaining ingredients excluding the last 3 tablespoons of sugar and mix until thoroughly combined. Gradually add flour mixture, stirring well after each addition.
4. Place the three tablespoons sugar in a small bowl. Form cookie dough into golf ball sized balls and roll in sugar. Place on a silicon baking mat or greased cookie sheet. Bake for 11-13 minutes, or until the tops are set. These cookies will stay a pale color, even when they are baked through so keep an eye on him.
