Solo Jambalaya

 Ingredients List

  • 1/4 lb Spicy sausage (Italian,
  • -chorizo or bratwurst)
  • 1 ts Vegetable oil
  • 2 tb Chopped onion
  • 2 tb Diced sweet green pepper
  • 2/3 c Canned tomatoes (undrained)
  • -chopped
  • 1/4 c Long-grain rice
  • 1 tb Tomato paste
  • 1/4 ts Salt
  • Pinch each dried thyme and
  • -hot pepper flakes

 Directions

In microwaveable pie plate, prick sausage all over with fork. Cover with
waxed paper; microwave at High for 1 1/2 minutes. Rotate and turn sausage
over; microwave at High for 1 minute. (Or brown in skillet over medium-high
heat.) Cut into thick slices.

Meanwhile, in saucepan, heat oil over medium heat; cook onion and green
pepper, stirring occasionally, for 2 to 3 minutes or until softened but not
browned.
