Ingredients List
- 1/4 lb Spicy sausage (Italian,
- -chorizo or bratwurst)
- 1 ts Vegetable oil
- 2 tb Chopped onion
- 2 tb Diced sweet green pepper
- 2/3 c Canned tomatoes (undrained)
- -chopped
- 1/4 c Long-grain rice
- 1 tb Tomato paste
- 1/4 ts Salt
- Pinch each dried thyme and
- -hot pepper flakes
Directions
In microwaveable pie plate, prick sausage all over with fork. Cover with
waxed paper; microwave at High for 1 1/2 minutes. Rotate and turn sausage
over; microwave at High for 1 minute. (Or brown in skillet over medium-high
heat.) Cut into thick slices.
Meanwhile, in saucepan, heat oil over medium heat; cook onion and green
pepper, stirring occasionally, for 2 to 3 minutes or until softened but not
browned.
