Southern Crab Royal

 Ingredients List

  • 1 1/2 tb Onion -- minced
  • 1 ds Nutmeg
  • 2 tb Green pepper -- finely
  • Chopped
  • 1/4 ts Dry mustard
  • 3 tb Margarine
  • 2 Egg yolks -- beaten
  • 2 tb Flour
  • 1 lb Crabmeat
  • 1 ts Salt
  • 8 Patty shells -- baked
  • 2 c Half & Half
  • Mushrooms & parsley/
  • Garnish


Saute onion and green pepper in margarine until tender. Add flour and salt
and cook 2 minutes. Gradually stir in Half & Half and stir until smooth.
Add nutmeg and mustard. Gradually add egg yolks, stirring constantly. Add
drained, flaked crabmeat. Cook 5 minutes. Serve in individual baked patty
shells and garnish with fresh mushrooms and parsley. From "The Southern
