Southern Crab Royal
Ingredients List
- 1 1/2 tb Onion -- minced
- 1 ds Nutmeg
- 2 tb Green pepper -- finely
- Chopped
- 1/4 ts Dry mustard
- 3 tb Margarine
- 2 Egg yolks -- beaten
- 2 tb Flour
- 1 lb Crabmeat
- 1 ts Salt
- 8 Patty shells -- baked
- 2 c Half & Half
- Mushrooms & parsley/
- Garnish
Directions
Saute onion and green pepper in margarine until tender. Add flour and salt
and cook 2 minutes. Gradually stir in Half & Half and stir until smooth.
Add nutmeg and mustard. Gradually add egg yolks, stirring constantly. Add
drained, flaked crabmeat. Cook 5 minutes. Serve in individual baked patty
shells and garnish with fresh mushrooms and parsley. From "The Southern
