Souvlaki (Grilled Pork Skewers)

Ingredients List
- 1 1/2 pounds of pork shoulder, cut in 3/4 inch cubes (budget approximately 3/4 of a pound of meat per person)
- 4 tablespoons of dry red wine (or good red wine vinegar, if marinating for less than 2 hours)
- 4 tablespoons of olive oil
- 2 teaspoon of ground Greek oregano
- 1 teaspoon Greek seasoning
- 1 teaspoon of freshly ground pepper
- 2 tablespoon of sea salt
- Metal skewers (if using charcoal grill) or wooden skewers (if using a gas grill)
Directions
1. In a small bowl, mix together the wine (or vinegar) and oil. Sprinkle oregano, greek seasoning, salt and pepper on top and mix together.
2. Place the pork in a medium container and pour the oil-vinegar mixture over the pork and toss to coat. Cover and refrigerate for at least 2 hours or preferably overnight. If using red wine, the meat can be marinated for up to 2 days as long as salt is also used.
3. Using 8 inch skewers, thread approximately 6 pieces of meat on each.
4. Grill skewers over charcoal or gas grill until well browned, about 15 minutes. Serve the skewers hot with a side of tzatziki (yoghurt-cucumber) sauce and a slice of bread.
