  • Recipe Submitted by on

 Ingredients List

  • 9 lasagna noodles, cooked
  • 1 spaghetti squash, cooked and skin removed
  • 24 ounces cottage cheese
  • 2 eggs
  • 9 ounces spinach, thawed and drained (squeeze excess liquid from it)
  • 16 ounces Mozzarella cheese
  • 1 jar, 24 oz pasta sauce

Preheat oven to 375.

Add 2 eggs to the container of cottage cheese and mix well.

Place a small amount of pasta sauce in the bottom of a 9x13 baking pan. Place 3 lasagna noodles into the bottom of the pan. Top with a layer of sauce, half of the squash, half of the cottage cheese, and half of the spinach. Top with a layer of cheese.

Repeat with a second layer. Once you have the second layer, add 3 lasagna noodles to the top, a layer of sauce and cheese.

Cover tightly with aluminum foil and bake for 35-40 minutes.

Remove foil and return to the oven for an additional 5-10 minutes or until cheese is melted on the top.

Let set for 10 minutes before serving.
