Spaghetti with Cheese and Pepper

- 1/4 cup olive oil
- 1 pound dried spaghetti
- 2 tablespoons butter
- 1 cup Pecorino or Cacio de Roma cheese, finely grated
- 1 tablespoon pepper, ground in mortar
- salt, to taste
Directions
This is an inexpensive and yet very tasty dish that I discovered while travelling in Italy last summer. The key in this recipe lies in its simplicity. Try it, you won't miss the tomato sauce a bit!
Directions:
1. Boil a pot of water. Once the water is boiling, add a dash of salt.
2. Cook the pasta in the boiling water according to the package directions, until al dente.
3. In the meantime, in a large skillet, heat the olive oil until it's almost smoking.
4. Drain the spaghetti, reserving approximately 1 cup of the cooking liquid, and add both spaghetti and liquid to the hot skillet.
5. Add the butter, cheese and ground pepper, and toss spaghetti over high heat for 1 min.
6. Serve immediately.
