Spam Jambalaya

 Ingredients List

  • 1 cn SPAM Luncheon Meat, cubed
  • -(12 oz)
  • 1 c Chopped onion
  • 2/3 c Chopped green bell pepper
  • 1/2 c Chopped celery
  • 2 Garlic cloves, minced
  • 1 cn Tomatoes, cut up (14 1/2 oz)
  • 1 cn Lower sodium chicken broth
  • -(10 3/4 oz)
  • 1/2 ts Dried leaf thyme
  • 8 dr Hot pepper sauce
  • 1 Bay leaf
  • 1 c Long grain rice
  • 2 tb Chopped parsley

 Directions

In large non-stick skillet or 3-quart non-stick saucepan, saute SPAM,
onion, green pepper, celery, and garlic until vegetables are tender. Add
tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaf. Bring to a
boil; stir in rice. Cover. Reduce heat and simmer 20 minutes or until rice
is tender. Discard bay leaf. Sprinkle with parlsley.
