  • 1 cn Spam Lite luncheon meat -
  • -(12 oz); cubed
  • 1 c Chopped onion
  • 2/3 c Chopped celery
  • 2 Garlic cloves; minced
  • 1 cn Cajun style or regular
  • -stewed tomatoes; (14 1/2
  • -oz)
  • 1 cn Lower-sodium chicken broth
  • --; (10 3/4 oz)
  • 1/2 ts Dried leaf thyme
  • 6 dr Hot pepper sauce -; (to 8
  • -drops)
  • 1 c Carolina or River rice
  • 2 tb Chopped parsley

 Directions

In lagre non-stick skillet or 3-quart non-stick saucepan, saute Spam,
onion, green pepper, celery, and garlic until vegetables are tender. Add
tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaves. Bring to
a boil; stir in Carolina or River rice. Cover. Reduce heat and simmer 20
minutes or until rice is tender. Discard bay leaves. Sprinkle with parsley.
