Spiced Butternut Squash

 Ingredients List

  • 4 lb Butternut squash
  • 1 c Nonfat chicken broth
  • 3 tb Unsalted butter; cut in
  • -small cubes
  • 1/2 ts Ginger
  • 1/4 ts Mace
  • 1/4 ts Ground coriander
  • 1 pn Cayenne pepper
  • 1/2 ts Salt
  • 1/4 ts Freshly ground black pepper
  • 1 tb Fresh lemon juice
  • 1/4 c Lowfat sour cream

 Directions

1. Halve, peel and seed the squash. Cut into 2 inch chunks.
