Spiced Fruit Compote - Country Living

Ingredients List
- 4 c Apple juice
- 1 4-inch cinnamon stick
- 8 Whole cloves
- 2 pk (11-oz) (about 3 C) mixed
- -dried fruit (we used pears;
- -peaches, & apricots)
- 1 c Dried figs
- 1/3 c Golden or dark seedless
- -raisins
- 1/3 c Dried sour cherries or
- -cranberries
- Fresh mint sprig; (opt.)
Directions
Just a few recipes from Country Living I downloaded and wanted to share.
1. In 3-quart saucepan, heat apple juice, cinnamon stick, and cloves to
boiling over medium heat. Cover and simmer 5 minutes.
2. Remove saucepan from heat. Discard cloves. Add dried fruit, figs,
raisins, and cherries and stir gently. Cover and let mixture stand at room
temperature 30 minutes to rehydrate the dried fruit.
3. Transfer fruit, juice, and cinnamon stick to compote or serving dish.
Cover and refrigerate at least 2 hours or until serving time. Garnish with
fresh mint sprig, if desired.
