Spicy Chicken and Sausage Soup

Ingredients List
- 1 pound of chicken breasts, uncooked (not frozen)
- 1/2 pound sausage, cut into bite-sized pieces (it can be pre-cooked or uncooked, it doesn't matter)
- 1 green or red bell pepper, chopped
- 1 tablespoon chili powder
- 1 (14 oz) can of Rotel
- 2 cups chicken broth
- 1 box frozen spinach, defrosted and squeezed of all the excess liquid
- 1/2 pound of uncooked pasta (I used shells)
- Salt and Pepper
- Chopped green onions, optional
Directions
1. In your slow cooker, add your chicken, sausage, bell pepper, chili powder, Rotel and chicken broth. Add in a big pinch of S&P. Stir and cover. Cook on low 6 to 7 hours or on high 3 to 4 hours.
2. About 30 minutes before you're ready to serve, take two forks and shred your chicken breast right inside the slow cooker. Then, stir in your spinach and uncooked pasta. Return the lid, move the heat to high and cook an additional 30 minutes or until pasta is tender.
3. Ladle into bowls and garnish with chopped green onions.
4. Simple, right? All you do is throw in your ingredients and the slow cooker does all the work! It's a one pot meal! And you determine the level of heat too. For a spicy version, pick a spicy sausage or for a more mild version, pick a more mild sausage. Hearty and yummy!
