Spicy Chilled Chi-Nese Noodles

Ingredients List

- 1 lb Chinese noodles
- 1 1/2 tb Oriental sesame oil
- 1 md Cucumber; shredded
- 4 oz Baked ham; shredded
- 1/2 ts Salt
- 8 oz Cooked chicken
- 1 Carrot; shredded
- 1 1/2 tb Toasted sesame seeds
Directions
SPICY SAUCE
3 tb Soy sauce
1 1/2 tb Vinegar
1 ts Sugar
1/2 c Chicken stock
3/4 ts Tabasco
3 tb Scallions; chopped
1 1/2 tb Sesame oil
Preparation : Bring a large kettle of water to a boil; add 1/2 tsp.salt and
the noo-dles. Boil 1 1/2 minutes, until the noodles are just done. Drain
and rinse with cold water to cool. Drain well and toss with 1 1/2 Tb.
ses-ame oil. Mix the ingredients for the sauce and set aside. Shred the
chicken, ham and vegetables. To serve, place the noodles on a platter.
Surround with the meats and vegetables. Top with the sauce and sprinkle
with the toasted sesame seeds.
