Spicy Tofu-Bell Pepper Supreme

 Ingredients List

  • 2 tb Olive oil, extra virgin OR
  • 2 tb Vegetable stock
  • 1 1/2 c Bell peppers, mixed green
  • -and red; diced
  • 3/4 c Onions, yellow; cubed
  • 1 1/4 c Salsa, tomato mild
  • 1/2 c Olives, black; pitted
  • 1 1/2 c Garbanzo beans, canned;
  • -drained
  • 1 c Tofu; baked, cubed
  • 1/8 ts Salt
  • 1/8 ts Pepper


Combine the oil, peppers, and onion in a saucepan and cook over high heat
for 5 to 8 minuts. Reduce the heat and add the remaining ingredients. Cook
over medium heat for 10 minutes. Serve with Fresh Corn Salad or brown rice.
