Spicy Tomato, White Bean, and Chorizo Chili

Ingredients List
- 1 lb. chorizo sausages, sliced
- 1 28 oz. can crushed tomatoes, or whole tomatoes (hand crushed)
- 4 c. beef stock
- 2 14 oz. cans white (cannellini) or Great Northern beans, drained
- 1/2 lb. green beans, trimmed and chopped into approx. 1 inch pieces
- 2 tbsp. flat leaf parsley, chopped
- salt and pepper to taste
Directions
In a big soup pot brown the chorizo sausages over high heat until brown and crisp.
Next, place the tomatoes and stock in the pot and bring to a boil. Reduce heat down to medium and add in the white beans and green beans. Cook for 10 minutes. Season with salt, pepper, and parsley. Let it simmer over low heat for an additional 10-15 minutes.
Best if made the day before.
