Ingredients List
- 1 1/2 tb Margarine
- 1 1/2 tb Flour
- 1 c Milk; skim
- 1/4 c Chicken broth
- 3/4 ts Salt; divided
- 1/4 ts Pepper
- 1/4 ts Nutmeg
- 2 c Ricotta cheese (part-skim)
- 10 oz Spinach; frgn, chpd, drained
- 2 oz Parmesan Cheese; grated
- 1/2 ts Garlic pwdr
- 8 Manicotti shells*
- 2 oz Mozzarella cheese; shredded

Directions
Cook manicotti shells according to directions and drain. In small saucepan
heat margarine over medium heat until bubbly and hot; add flour and cook,
stirring constantly for 1 minute. Reduce heat to low; gradually stir in
milk and broth. Continue to stir and cook until mixture is smooth; add 1/4
t. salt and dash each of pepper and nutmeg and let simmer, stirring
occasionally, until mixture is thickened, 10-15 minutes. While mixture is

with remaining sauce and sprinkle with mozzarella. Cover dish and bake
until manicotti are heated through, 20-25 minutes. Turn oven control to
broil, uncover pan, and broil until cheese is melted and lightly browned,
