Spinach Manicotti-Ww

  • 1 1/2 tb Flour
  • 1 c Milk; skim
  • 1/4 c Chicken broth
  • 3/4 ts Salt; divided
  • 1/4 ts Pepper
  • 1/4 ts Nutmeg
  • 2 c Ricotta cheese (part-skim)
  • 10 oz Spinach; frgn, chpd, drained
  • 2 oz Parmesan Cheese; grated
  • 1/2 ts Garlic pwdr
  • 8 Manicotti shells*
  • 2 oz Mozzarella cheese; shredded
  • 1 1/2 tb Margarine
  • 1 1/2 tb Flour

 Directions

Cook manicotti shells according to directions and drain. In small saucepan
heat margarine over medium heat until bubbly and hot; add flour and cook,
stirring constantly for 1 minute. Reduce heat to low; gradually stir in
milk and broth. Continue to stir and cook until mixture is smooth; add 1/4
t. salt and dash each of pepper and nutmeg and let simmer, stirring
occasionally, until mixture is thickened, 10-15 minutes. While mixture is

small saucepan heat margarine until bubbly; add flour and cook, stirring
constantly for 1 min. Gradually stir in milk and broth. Stir and cook until
mixture is smooth. Add 1/4 t. salt and dash of pepper and nutmeg. Let
simmer, stirring occasionally, until mixture is thickened, 10-15 minutes.
Meanwhile, combine ricotta cheese, spinach, Parmesan cheese, garlic powder,
remaining salt, pepper and nutmeg, and mix well. Preheat oven to 350*F. In
bottom of 13x9x2 baking dish, spread 1/3 cup sauce. Stuff 1/8 of spinach
mixture into each manicotti shell and arrange stuffed shells in dish; top
with remaining sauce and sprinkle with mozzarella. Cover dish and bake
until manicotti are heated through, 20-25 minutes. Turn oven control to
broil, uncover pan, and broil until cheese is melted and lightly browned,
3-5 minutes. 2 Manicotti=464 calories.
