Spinach Turkey Meatball Pasta

Ingredients List
- 1 tablespoon olive oil
- 6 ounces ground turkey
- 1 red onion, minced
- 2 cloves garlic, minced
- 1 tomato, chopped
- 1 cup chopped spinach
- 4 ounces spaghetti
- 1 1/2 cups water (or broth)
- Salt
- Pepper
- 2 tablespoons Parmesan cheese (optional)
Directions
1. Heat olive oil in a pan over medium heat. Once hot, add turkey, onion, and garlic, and cook 5 minutes until browned. Add tomato and spinach, and cook for 2 minutes. Add pasta and water, and bring to a boil. Turn heat to low and simmer with the lid on for about 20 minutes or until water reduces to form a light sauce. Add salt and pepper to taste. Garnish with Parmesan, if desired
