Squash-Corn Casserole

 Ingredients List

  • 3 Or 4 zucchini (or yellow
  • Summer squash) sliced
  • 1 c Whole kernel corn
  • 1/3 Onion -- chopped
  • 1 Jalapeno pepper -- seeded
  • And chopped
  • Salt to taste


Mix above ingredients and cook (or steam) until tender. Drain and top=20
with: 3/4 cup grated cheddar or Monterey Jack cheese. Bake about 10=20
