 Ingredients List

  • 1 Endive or head of lettuce
  • 2 lb Potatoes; peeled
  • 1/2 lb Smoked bacon; diced
  • 3 md Onions; chopped
  • 1/2 c Water
  • Salt & pepper to taste


Boil potatoes in salted water. Cut endive in small, longish pieces. Fry
bacon & onion until golden brown. Mash potatoes, add half of bacon mixture
& the water. Add endive & mix; salt & pepper to taste. At serving time, top
with remaining bacon mixture.
