Steak Diablo

 Ingredients List

  • 2 tb Olive oil
  • 1 md Yellow onion; diced
  • -fine
  • 1/2 c Fresh garlic; chopped fine
  • 2 c Green chile peppers;
  • -roasted, peeled; seeded,
  • -chopped
  • 2 ts Dried oregano (Mexican
  • -prefered)
  • Salt to taste
  • 12 sl Provolone; cut in half
  • 8 6-oz steaks (New York; etc)

 Directions

Heat olive oil over medium heat, add garlic and onion. Saute until onion
turns transparant, 5-6 min. Add green chile, oregano and salt, cook another
5 minutes and remove from heat.

Grill steaks until 2/3 done (maybe 3-4 min/side). Place steaks in preheated
broiler, top with green chile sauce and provolone.. Broil 1-2 min until
cheese is melted and steaks are done.
