Stir Fried Broccoli and Carrots

 Ingredients List

  • 2 ts Ginger
  • 1 Clove garlic -- chopped
  • Fine
  • 1 1/2 c Broccoli flowerets -- small
  • 2 md Carrots -- sliced thin
  • 1 sm Onion -- sliced
  • 3/4 c Chicken broth
  • 1/4 ts Salt
  • 1 tb Cornstarch
  • 1 tb Water -- cold
  • 1 c Mushrooms -- sliced

 Directions

Prepare a 12" skillet with cooking spray; heat until hot. Add ginger and
garlic; stir fry about 1 minute or until light brown. Add broccoli,
carrots, and onion; stir fry 1 minute. Stir in broth and salt; stir into
vegetable mixture. Cook and stir 10 seconds or until thickened. Add water
and mushrooms; cook and stir 30 seconds.
