String Bean Salad

 Ingredients List

  • 1 lb String beans, blanched &
  • -- sliced
  • 2 Green chilies, julienned
  • 2 Red chilies, julienned
  • 1/2 lb Tofu, pressed & cubed
  • 1/2 c Coconut milk
  • 2 tb Soy sauce
  • 4 tb Lime juice
  • 2 tb Sugar
  • 1 tb Chili sauce, see recipe

 Directions

Place the beans on a large serving platter & arrange the green & red
chilies & tof cubes over the top. In a small bowl, mix together the
coconut milk, soy sauce, lime juice, sugar & chili sauce. Just before
serving, pour the dressing over the salad.
