Stuffed Artichoke Bottoms

 Ingredients List

  • 2 oz Lowfat cream cheese or
  • Neufchatel
  • 2 tb Crumbled bleu cheese
  • 1 tb Lowfat mayonnaise
  • 12 Marinated artichoke bottoms
  • Paprika -- for garnish

 Directions

In a small bowl, mix together cheeses and mayonnaise. Spoon cheese mixture
into artichoke bottoms and garnish with a dusting of paprika. Serve at room
temperature.

Makes 1 dozen stuffed artichoke bottoms.
