Ingredients List
- parchment or wax paper
- 2 cups almonds (alternatively, you can substitute this with 2 cups equivalent of nuts, including pecans, pistachios, almonds, walnuts and brazil nuts)
- 1 cup pitted dates (or substitute with figs, dried plums (prunes) or cranberries)
- 1 cup dried apricots
- 1 teaspoon ground cinnamon
- 2 teaspoons grated orange zest
- 2 tablespoons orange juice
- 1 tablespoon honey
- Unsweetened flaked coconut for rolling
Directions
1. Preheat oven to 400°. Arrange almonds on a baking sheet in a single layer and toast in oven for 10 minutes. Set aside to cool.
2. Line a baking sheet with parchment or wax paper.
3. Combine the almonds, dates, apricots, cinnamon, and orange zest in a food processor and process into a finely ground mixture.
4. Add the orange juice and honey, and combine until the mixture becomes a sticky ball.
5. Pinch off rounded teaspoon-size pieces of the mixture and form into 1-inch balls.(Rinse your hands often, as mixture is very sticky.) Roll in coconut. Place on the baking sheet and chill for about 1 hour until firm.
