Sugared Cranberry Shortbread.

Ingredients List
- 1 cup (2 sticks) salted Challenge Butter
- 1 1/4 cup granulated sugar, divided
- 1 large egg
- 2 cups all purpose flour
- 1 cup dried cranberries
Directions
1. Preheat oven to 350. Line a 9x13 pan with foil and set aside.
2. In the bowl of your mixer, beat Challenge Butter and 1 cup sugar on medium speed for 1 minute, until smooth and fluffy. Beat in egg until blended. Add flour and mix on medium until a smooth dough forms. Fold in cranberries.
3. Press dough evenly into prepared pan and sprinkle top with remaining 1/4 cup sugar. Bake for about 25-30 minutes or until edges are light brown and bars are barely golden. Remove from oven and let cool before removing foil and cutting into squares.
