Summer Vegetables and Cheese

 Ingredients List

  • 1 sm Onion -- thinly sliced
  • 2 tb Cooking oil
  • 2 md Zucchini -- sliced
  • 2 md Yellow squash -- sliced
  • 3 md Tomatoes -- diced
  • 8 oz Mozzarella cheese -- grated


Saute onion with oil in large skillet or wok. Cook until clear. Add=20
zucchini and yellow squash and cook until just tender. Add tomatoes and=20
cheese and cook until cheese has just melted. Serve immediately.
