Sun Fruit Salad with Banana Dressing

 Ingredients List

  • 2 md Bananas; peel, slice
  • 8 oz Lemon low-fat yogurt
  • 2 tb Sugar
  • 2 ts Lemon juice
  • Lettuce leaves
  • 8 c Cut-up fruit such as:
  • -papaya; banana,
  • -strawberries star fruit,
  • -cantaloupe honeydew, mango,
  • -kiwi fruit and/or
  • -blueberries


For Dressing: In a blender or food processor, combine sliced bananas, lemon
yogurt, sugar and lemon juice; cover and blend for 15 to 20 seconds or
until smooth. Chill dressing, covered, for up to two hours.
