SunButter Paleo Pumpkin Spice Scones

Ingredients List
- 2 c. coconut flour
- 1/3 c. sugar in the raw
- 2 eggs
- 1/2 c. canned pumpkin
- 1/2 c. SunButter
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1/4 tsp. cloves
- 1 tsp. baking soda
- 1 tsp. vanilla
- Glaze Ingredients:
- 2 Tbsp. SunButter
- 1/2 tsp. honey
- 1/2 tsp. coconut milk
- 1/8 tsp. pumpkin pie spice
Directions
Preheat oven to 350 degrees Fahrenheit. Beat together flour, sugar and spices. In other bowl, beat together eggs, pumpkin, SunButter and vanilla. Add dry ingredients to wet and combine well. If needed, add a bit of water so the dough is not dry, but not too sticky.
Divide the dough in half and roll into two equal sized balls. With floured hands, form into circles about 1 inch thick on floured surface. Cut each into eight, triangle shaped pieces. Separate and place on baking sheet. Bake 15 ”“ 20 minutes.
Meanwhile, combine glaze ingredients. Cool scones and then drizzle with glaze.
