Sweet Almond Puff Pastry

Ingredients List
- 1 package (17.3 ounces) frozen puff pastry, thawed
- 1 egg, separated
- 1 tablespoon water
- 1 cup sliced almonds
- 1 cup sugar
- 2 cups whipped topping
- 1 teaspoon vanilla extract
- Confectioners' sugar
Directions
1. Carefully unfold the puff pastry sheets onto a lightly floured surface. Cut each sheet into nine 3-inch squares. Then, place them 1 inch apart on greased baking sheets.
2. In a small bowl, combine egg yolk and water; Beat the mixture. Lightly brush it over the pastry squares.
3. In another small bowl, beat the egg white; add almonds and sugar. Spread it over each square.
4. Bake at 375° for 20-25 minutes or until well puffed and browned. Remove to wire racks to cool.
5. Once cooled, split pastries in half horizontally. Mix vanilla extract into the whipped topping. Cover the bottom half with whipped topping and place the upper half on top. Sprinkle with confectioners' sugar. Serve immediately.
