Sweet and Sour Chicken Salad

 Ingredients List

  • 3/4 lb Boneless skinless chicken
  • -breast; cooked and cut into
  • -2 inch cubes
  • 1 c Celery; diagonally sliced
  • 2/3 c Snow peas; trimmed
  • 1/3 c Red bell pepper; seeded and
  • -diced
  • 2/3 c Apples; preferably Gala,
  • -unpeeled and diced
  • 2 tb Vinegar; plus 2 teaspoons
  • 2 tb Canola oil; plus 2 teaspoons
  • 1 tb Sugar; plus 1 teaspoon
  • 3/4 ts Paprika
  • 3/4 ts Celery seed
  • Salt and pepper; to taste

 Directions

Combine all salad ingredients. Whisk together the dressing ingredients.
Pour the dressing over the salad and serve.
