Sweet and Sour Chicken Salad

Ingredients List
- 3/4 lb Boneless skinless chicken
- -breast; cooked and cut into
- -2 inch cubes
- 1 c Celery; diagonally sliced
- 2/3 c Snow peas; trimmed
- 1/3 c Red bell pepper; seeded and
- -diced
- 2/3 c Apples; preferably Gala,
- -unpeeled and diced
- 2 tb Vinegar; plus 2 teaspoons
- 2 tb Canola oil; plus 2 teaspoons
- 1 tb Sugar; plus 1 teaspoon
- 3/4 ts Paprika
- 3/4 ts Celery seed
- Salt and pepper; to taste
Directions
Combine all salad ingredients. Whisk together the dressing ingredients.
Pour the dressing over the salad and serve.
