Sweet Garden Peas with Mint

Ingredients List
- 3 lg Lettuce leaves, shredded
- 2 tb Scallions, minced
- 1 ts Butter
- 1/2 ts Salt
- 1/4 ts Pepper
- 30 oz Frozen tiny peas, thawed
- 1/2 c Water
- 2 tb Shredded fresh mint
Directions
Place lettuce in a heavy medium pan. Add scallions, butter, salt, and
pepper. Cover and cook on high until steam starts to rise. Add peas and
water. Cover again, bring to a boil, then lower heat and simmer 10 to 15
minutes or until peas are tender but still retain their bright color. Stir
in mint, cover, and steam 1 minute. Serve immediately.
