Sweet Potatoes a L'orange

 Ingredients List

  • 2 lb Sweet Potatoes, cooked -or-
  • 2 lb Vacuum-Packed Sweet Potatoes 2 tb Margarine, melted 1/2 ts Ground
  • Cinnamon 16 Apricot Halves, dried
  • Orange Slices, fresh
  • Arrange the sweet potatoes in a shallow baking dish. Combine the margarine
  • and cinnamon. Pour over the potatoes. Arrange the apricot halves on top.
  • Cover the dish and bake in a 425-degree oven for about 15 minutes. Add the
  • orange slices and serve.

Title: Sweet Potatoes and Apples

Yield: 1 Servings

3 Sweet potatoes
1 c Apples; sliced & peeled
1/4 c Sugar; brown
Cinnamon
Butter
1/4 c Apple juice or water

Peel sweet potatoes, cut in 1/2 and slice. Cook covered till nearly done
in very little boiling water. Take apples (sprinkle with lemon juice, if
not tart). Grease baking dish, place alternate layers of sweet potatoes &
apples. Sprinkle layers with 1/4 cup brown sugar, cinnamon, dot with butter
& pour 1/4 cup water (or apple juice). Bake 1 hour at 350F.
