Swiss Pear Supper Salad

 Ingredients List

  • 1 pk Frozen green peas; (10 oz.)
  • 2 c Diced Swiss cheese; (8 oz.)
  • 2 tb Minced green onion
  • 1/2 c Diced celery and sliced
  • -water chestnuts
  • 1/4 c Thinly sliced radishes
  • 3 Fresh; ripe USA Anjou Pears
  • 2 ts Lemon juice
  • Lettuce


1/4 c Plain yogurt
1/4 c Dairy sour cream
1 tb Mayonnaise
2 ts Grated lemon peel
1 ts Sugar
1/4 teaspoon dry mustard
1 ds Salt and pepper

Cook peas according to package directions. Drain thoroughly and chill.
Combine peas with cheese, green onion, celery, water chestnuts and radishes
in large bowl. Core and dice 1 pear; toss with lemon juice and add to
salad. Toss salad with Yogurt Dressing. Mound on individual lettuce-lined
plates. Slice remaining pears; arrange on greens around salads.

Yogurt Dressing

Blend yogurt and sour cream, mayonnaise, lemon peel, sugar, dry mustard and
salt and pepper in small bowl. Refrigerate at least 1 hour to blend
flavors. Makes about 1/2 cup dressing.

Always be sure to use ripe pears.
