Swiss Steak

 Ingredients List

  • 2 lb Round Steak*
  • 1 ts Salt
  • 1/8 ts Pepper
  • 2 tb All Purpose Flour
  • 3 tb Fat
  • 1 Small Onion
  • 2 c Tomato Juice
  • 1 ts Worstershire Sauce
  • 1 Stalk Chopped Cellery
  • 1 Chopped Green Pepper
  • 1/4 c Sliced Mushrooms


Leave steak in one piece or cut into serving pieces. season with salt and
pepper; sprinkle with all purpose flour. Heat a heavy frying pan and melt
the fat. Brown meat on both sides; brown onions. Add remaining ingredients;
stir well. Cover and cook slowly on top of stove or bake in a moderate oven
(325 deg.) for 1 1/4 to 1 1/2 hours or until tender. Add more liquid if
necessary, to keep meat from sticking.
