Tartar of Smoked Salmon on Rye Barquette

 Ingredients List

  • 1 lb Smoked salmon minced by
  • Hand
  • 1 tb Capers
  • Juice of 1 lemon only
  • 1 ts Minced onion
  • 1 Egg white
  • 1/2 ts Fresh chives finely chopped
  • 30 Barquettes-boat shaped
  • Pastry


MIx well minced salmon, capers, lemon juice, onion, egg white and chives
and portion into 30 equal parts. Top barquettes and serve. If barquettes
are not available, use round 1 inch croutons or similar cracker as base.
