Tasty Zucchini with Parmesan Crust

Ingredients List
- 4 medium zucchini
- 1 1/2 tbsp butter, melted
- 2/3 cup parmesan cheese, grated
- salt to taste
Directions
Bring a large pot of water to a boil. Once boiling, add a dash of salt.
Wash the zucchini skins and cut them into strips about 3 inches long and 1/2 inches thick.
Blanch the zucchini by first adding it to the boiling water and cook until barely tender, about 3-4 minutes. Next, drain them and quickly plunge them into previously prepared ice water in order to stop the cooking. Drain them again and place them in single layer on cutting board, while patting dry with paper towels.
While the zucchini are cooking, preheat the broiler and adjust the rack so it is six inches away from the heat. Lightly grease a broiling pan with butter.
Arrange zucchini on broiler pan in rows, close together, skin side down, leaving just a little space between each piece so that the cheese can run down a bit. Brush zucchini with melted butter. Sprinkle parmesan cheese over zucchini, trying to get most of the zucchini covered.
Put zucchini under broiler and cook until cheese is completely melted and well-browned, about 15 minutes.
Serve hot. Enjoy!
